Whole Wheat Banana Bread with Raisins

I wanted to title this post: Call Me Betty Crocker B!tches lol!! But Ive already said that on facebook, twitter, and blackberry messenger.

When I came back home from my Spring Break holiday, I noticed m sister bought me some bananas but now they were overly ripe and mushy. I didnt want to eat them, and I didn't want to throw them away, so my girl Nels told me to make an African dish from her country which involved frying, so I said no, then she suggested banana bread & BINGO!

I have a lot of whole wheat flour at home for making fufu, so I decided to use it, and I googled Whole Wheat Banana Bread & found a great recipe which i used (it was a perfect match because I wanted to use nutmeg & cinnamon). I had two bunches of bananas about 13 bananas, so I decided to multiply the ingredients by x3.5 to get the right proportion (except the flour which I multiplied x3).

I felt like a mini Dedene that morning, baking myself away, though praying it would turn out right (my twitter buddies had their fingers crossed ). Luckily it did & It was great.



  • I used agave nectar when I was out of honey
  • sometimes my stiring/ whisking didn't seem good enough so I blended with my Vita Mix... yup even my bananas
  • I added dried raisins (you can add nuts, or dried cranberries or nothing extra)
  • I sprayed my pan with Bakers Joy


*make sure to use ultra ripe bananas, the peel might even start looking black.. that's good*

½ cup (1 stick or 4 ounces) unsalted butter
½ cup (3 ¾ ounces) packed light or dark brown sugar
¾ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
1 ½ cups (~ 12 ounces) mashed ripe banana (3-4 medium to large bananas)
¼ cup (3 ounces) honey (I used sugar – works fine)
2 large eggs
2 cups (8 ounces) whole wheat flour, traditional or white whole wheat (I found that 2 cups was closer to 10 ounces – guess my whole wheat is heavy)
½ cups (2 ounces) chopped walnuts


Preheat oven to 350 F degrees. Lightly grease a 9 x 5 inch loaf pan.

Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth.

Add the banana, honey and eggs, beating until smooth. Add the flour and nuts, stirring until smooth.
My bananas were so much, I had to slowly add the flour etc into it, rather than viceversa

Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.
1. let sit for 10 mins   2. Oven     3. Out of oven  (foil part)     4. Tester       5 & 6: Viola!

Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake until a cake tester (like a toothpick) inserted into the center comes out clean, 10 to 15 minutes more. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.

Final Result:

The Bread came out really nice, like a nice cake. it was soft, tasty, sweet.

This is not my recipe I got it via BREADTOPIAMoist Whole Wheat Banana Bread which they altered from the Whole Grain Baking by King Arthur Flour.

ps: WHOA!! i just realized it has a 7 minute video on the site, I viewed it on my cell phone so I didn't see the video when I made mine. the video helps give extra visuals or a different method. (remember I manual whisked & then... blended with a vita mix blender lol ;)

pps: I also wonder if I were to use just sugar or honey & not both.

Monkey Joes with my little cousins

When I was a kid and summer in LA my aunt would take me and my brothers, sisters, cousins etc (trust me it was like the Brady Bunch) to Six Flags, Disney (every year), Knotts Berry Farm, once to Sea World, Raging Waters (which was the best) and Universal Studios. & of course Chuck E. Cheese.

That's a lot! So now I'm kind of a grown up, so I decided to take her kids somewhere fun. My little cousins came to spend the weekend with me & my sis. She took them to Church & after their Kumon Homework I took them to Monkey Joes.

I wanted to take them somewhere fun that they had never been to, and trust me these kids like most have been to Chuck E Cheese. So I asked people on twitter for a good suggestion similar to Chuck E. Cheese here in Georgia, & Monkey Joes  was suggested by  @CidGal02@Cajun_peach , @LngHrThkRedbone, & @ScorpionGold. I had never heard of this place, so I checked out

and called the location close to me  in Tucker GA (they have other locations) and I asked if they had games etc.

My little cousins love cars so much, look at them pose! awwww.

NOTE BELOW: sure.... I let them out without brushing their hair, BUT I bundled them in my jacket & scarf since they forgot theirs. Sadly they refused to take pictures in it, I think they were ashamed of my awesome oversized clothing lol, I doubt they will ever forget their clothes again ;)
if you look well in picture 4, you will see m little cousin chose to wear his shirt inside out!!! *sigh* I let that go too lol.

The place was pretty cool, it reminded me of WipeOut, Global Gladiators, and those racing games I watched as a kid. The kids got to play in bouncing castles  *Don't You Dare Forget Your Socks!!! or you'll have to buy some for about $2* To enter each kid was about $10. I was free. ps: Am I cheap or does food in such places seem so expensive!! Like nachos, or even a slice of pizza is some kind of expensive delicacy. I promise you I made sure my little cousins ate a lot before we got there but did that help?? not really they still ate a bit there.

It was a lot of fun, and my girl Meron came out to hang with me.

By the end of the night, my cousins were passed out.

I'm a PC!!! i don't want to switch teams -- got a new computer

ok so it's been a really long time since I blogged. was out of town with friends & I was M.I.A to the cyber world so.... let's catch up.

I have a shitty computer. My left click button doesn't work, so I have to use touchpad/ trackpad above it & tap to do everything including photoshop. My computer used to be super slow, so I bought new memory ($100). The battery sucks, but been too lazy/ cheap to spend another $100 on a better battery. It's been a year plus battle with my computer.. and now finally the back cable isn't working. I have to twist the back cable in order to get power. Sadly to fix all the problems, they will have to open the computer, bla bla touch the motherboard.... blah blah costs almost the price of a new computer.

SO...basically I have to buy a new computer.

Should I buy another PC that will stop working in 2-3 years as usual, or Should I try this annoying apple computer that people rave about and claim it doesn't crash.

what got me  was resale value. A greatly cared for and used PC, 2 years later can sell for $10 and a greatly cared for and used MAC can sell for $800+. No need to say more.

So after searching I deciced the 17inch Macbook Pro, with anti glare, 8gig, quad core i7 woul d be perfect for me. Originally worth $2,500, and with my customizations would be $3,000. Then Reality hit & I respected myself and got the cheapest Macbook Pro available which is still waaaay too expensive in comparison with Windows (and that still hurt).

So I got a 13inch Macbook Pro, Dual Core, and added more GB (cost $1235.52 ).

PS:: if you buy one, make sure you do the student discount for your school. I got a $100 off from my school

YUP it's freaking glossy!!! so reflective. don't you hate seeing your reflection when your trying to work or watch a movie! 13 inch's don't have antiglare!!! :(

1st thing I did when enable right click etc!!!!

3 hrs I can't get back ( since i exchanged this computer for the core i5)

Then guess what!! 2 weeks later I found out that Apple decided to release a new MacBook Pro 13inch i5 which is faster and better than my dual core. FOR the same price I paid!!!!!

so if this happened to you, you have 30 to trade it in for the newer model. (when I exchanged it for the newer model they gave me back $48 ---- well honestly i was 34  days late, but they gave me "a one time courtesy")

(I'm still using my messed up PC until I move everything to my mac---- :( I really love windows :( and will miss it!! well not really, I'll prob add Windows 7 OS to my MAC)
